These unusual, thistle-like flowers have prominent, cone-shaped centers surrounded by a stiff, bristly collar. Blue Star’s color is equally striking. The foliage is blue-grey and the flowers are vivid, metallic blue. Eryngium grows 3 feet tall and has a long taproot. It should be planted in full sun, and grows best in relatively poor, dry soil. Commonly known as sea holly.
